Camtasia for simple screen recording of long videos. Pretty simple and straightforward editing capabilities.
Loom for personalized instructions or short recordings.
OBS for screen recording when featuring the speaker with a green screen effect.
Loom or OBS. At least that's what I used to create the demos of the games I make, then overlay with editing from another software.
