Try to target restaurants that haven't opened yet but I think the swapping costs of established organizations is going to be through the roof. Something you can try if you lived in Manhattan where restaurants are constantly closing and opening up is you could walk around everyday and note every new opening restaurant and try to find the owner and contact that them and sell your software, that's what I'd do anyways. Other cities with suburbs don't have restaurants opening and closing all of the time so it will be hard to gain traction.
