One of the selling points is that we get all the AppScript source code so we can tweak the Sheet behaviour (with help from a coding copilot like ChatGPT). Unlike a SaaS, this will still work even if the company fails. Each creation step can be edited and run again - this give a level of control that we wouldn't get with 'normal' apps. It's more private than a SaaS too - even the developer can't see your work. The developer is very responsive and helpful. This is one of the top software purchases I've made, and it 'feels' like the safest in terms of privacy and longevity.
