OBS Studio! It's a little harder to learn, but once you have about an hour or so of experience with it, you're able to do most of the demos you need to do.

I normally use QuickTime or OBS. But I was looking for tools to create professional looking demo videos quickly and couldn't fine one so I made Slant it – https://slantit.app which is also what I use 🙌
