Waiting List

We’re about to launch a new product in the personal assistant space wherein someone sends in a request and a human knocks it out (ie. makes a dinner reservation, cancels a subscription, conducts research, etc). Due to the nature of the product, I worry we may over capacitate and would hate for a users first impression of us on launch day to be slow response times. I’m thinking a waiting list similar to Flowrites or Superhumans may be the solution, my only worry being that it seems like a gimmick. Has anyone created a similar waitlist before, and if so, are there any things I should be aware of?
