Our startup is launching a new product in a market that is already saturated with similar offerings. We’re wondering what strategies we can employ to make sure our product stands out and captures the attention of potential customers. What are some innovative ways to differentiate our product without resorting to price wars?

It's not about the product, IMHO.
It's about the founder and team, and your company's unique POV.
What do you stand for?
What do you stand against in your industry?
Don't be afraid to talk about that. Your future ambassadors are the people who will clearly align with those things, and also love your product, because it serves them.
There are a few books that outline this idea very well.

Step 1: Research market gaps before building, so you don't encounter such problem. But since you're here, focus marketing where competitors aren't but customers are - Reddit, Quora, or SEO. Hard to be specific without knowing your product.
To make our product stand out in a crowded market, we should focus on what makes it unique.
Identifying a specific niche or feature that competitors overlook can really help. This could be a distinctive user experience or a tailored solution for a particular audience.
Sharing real customer success stories and how our product solves genuine problems can resonate more than just listing features.
Additionally, collaborating with influencers or industry leaders for endorsements can boost our visibility and credibility, allowing our product to shine.
To stand out, focus on unique features, exceptional user experience, and clear communication of your product's value proposition.
Reach out to your intended users. Research where they usually hangout like say in terms of platform are they more on instagram, x, or tiktok? Then create contents that they will engage with. There's so much more, but I think reaching out or building your community is one of the best ways to do what you want.
You should invest in quality materials
I think there needs to be at least one 'unique' function or idea for your product. Also, UI/UX is really important too when it comes to customers customers choosing which to use among similar products.
