Building for one customer persona vs. building for everyone | Productivity tools

A lot of VCs say "Who is your target user? Build something specifically for them that they fall in love with." [When I pitch my productivity startup this is the response I get]
But we're seeing a lot of top productivity tools (Notion, Clickup) being built for everyone - different parts of the app targeted at different personas and customizable for each persona's needs.
What do you guys think?

@harry_qi from Motion Task Manager should be able to shed some light here. He just raised a round so probably has insights from his investors as well. Pertinent problem that we at SmartCue are facing as well. Interested to see what folks think!
