Steal the IDEO playbook! Start with a job/persona/customer you know something about, ideally in a large & growing industry. Interview 5-7 customers in this category 1:1, with a focus on their most expensive or time consuming pain points, workarounds and bottlenecks. This should give you a few ideas for solutions. Then design 3-5 rough UI mockups (think Sharpie on paper) or landing page mockups to communicate your concepts. Go back to those 5-7 customers and get their feedback, including what they might pay. One of the concepts will rise to the top—or you'll combine a couple.
PS, an AI-centric solution will be fast to build, but more commoditized and harder to differentiate. Focus on solving the problem really well, and only bring in AI where/when it helps. Just my 2¢!

Totally agree on focusing the solution around customer needs vs just using AI! Would also add to not overcomplicate the MVP - figure out the core 20% of features that deliver 80% of the value and get that in front of some beta users ASAP. Then iterate based on real feedback. Notion AI is a great example of this - they started simple with just a few key features and built from there based on user demand. My 2 cents!
