If you are very early MVP ask friends or family which are working or having experience in the same market. If there are no one search for some free testing users in different communities: here on product hunt, reddit, perhaps facebook, slack communities, etc... I wish you the best for your product and for your startup!

I dont like "no cde" platform. Firstly you are completely vendor locked in. So if the platform or the company behind it will stop to work your entire app is not available anymore and you cannot migrate it somewhere else. Further more you are limited by the features which are provided by the tool (sometimes you can bring your own code and run it inside some containers but this feels very crappy)

We use as well AWS SES for sending emails. SMS or Push is not used by our app. But here I would recommend AWS SNS or AWS Pinpoint

AI support us in tasks which are perfect for automation. Or supporting to write some code. But it still needs a lot of control and can't simply be adopted bluntly.

Yes but a lightweight version of it. For example our sprint planning meeting is every two weeks. I am not a fan of following the strict rules without checking if these fit for our team and requirements.
