I think any field that depends upon suggestions for example Career Consulting, Financial Advisor (I can't trust AI for my money) etc
I read design blogs to stay up-to-date on the latest trends. I also find them to be a great source of inspiration.

Creativity, man. AI can spit out art or music based on data, but it can't feel inspiration or have that random "light bulb" moment.
The way humans emote. We don't know things about our subconscious mind and it's programming. Because that is a black box and not a straight 1 or 0, it would be immensely complicated to replicate it on a machine.

Intuition. I firmly believe intuition in a sense that we humans possess it's what truly differentiates us from other animals!
AI has been beating humans at chess for 20+ years, but humans playing chess has never been so popular. People don't watch AI play chess, but watching humans play is still so engaging because humans love the struggle and emotions.
